My ever-bearing strawberries are over achievers this year. They’re supposed to take a rest in July, but the cooler summer temperatures and abundant rains, plus all that mushroom compost I added to the soil in the spring, have made them quite happy. I am still picking about a pint of fresh garden berries every two or three days, and while the berries are on the small side, they are no less delicious.
This morning, I whipped up a strawberry breakfast smoothie recipethat came out great. I named it Strawberry Breakfast Smoothie Surprise because I surprised myself with the sweet, filling concoction. I’m not a huge fan of breakfast smoothies but this one is a keeper.
Strawberry Breakfast Smoothie Recipe
To make this quick breakfast smoothie, you’ll need a blender plus the following ingredients:
- 1 cup of fresh strawberries, rinsed with tops sliced off
- 1 cup of frozen mixed berries or strawberries
- 1 cup of plain yogurt or berry-flavored yogurt
- 1 cup of cranberry or cranberry blend juice
Place the juice into the blender first, then the yogurt, then the fresh and frozen berries. Blend for 30 to 60 seconds. Pour into glasses and serve. Makes enough for two.
