The right time and method can help you keep them fresh during the winter.<\/p>\n\n\n\n<p>This week, we\u2019re celebrating fall by celebrating one of my favorite vegetables: sweet potatoes! <a href=\"http:\/\/nutritiondata.self.com\/facts\/vegetables-and-vegetable-products\/2667\/2\">Sweet potatoes<\/a> are an excellent source of vitamin A, with each potato providing over 700% of your daily RDA for this important vitamin. They\u2019re also a great source of vitamin C, providing 65% of your daily requirements for vitamin C, too. And they taste great!<\/p>\n\n\n\n<p>Did you know that <a href=\"http:\/\/www.hanahou.com\/pages\/Magazine.asp?Action=DrawArticle&amp;ArticleID=712&amp;MagazineID=44\">sweet potatoes<\/a> have been cultivated for approximately 10,000 years? That\u2019s not a typo. Remains of cultivated sweet potatoes have been found by archaeologists and tentatively dated to 8,000 B.C.&nbsp; South Americans grew sweet potatoes around this time, with evidence suggesting that Central Americans grew them as early as 5,000 B.C.<\/p>\n\n\n\n<p>Sweet potatoes need long, hot summers to grow to maturity. There are newer varieties that can be grown in more northern climates. North Carolina is the sweet potato capital here in America, with Georgia and Virginia also producing an abundant crop.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"1024\" src=\"https:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2014\/09\/sweet-potatoes-1024x1024.jpg\" alt=\"sweet potatoes in a wheelbarrow\" class=\"wp-image-18087\" srcset=\"https:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2014\/09\/sweet-potatoes-1024x1024.jpg 1024w, https:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2014\/09\/sweet-potatoes-300x300.jpg 300w, https:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2014\/09\/sweet-potatoes-150x150.jpg 150w, https:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2014\/09\/sweet-potatoes-768x768.jpg 768w, https:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2014\/09\/sweet-potatoes-500x500.jpg 500w, https:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2014\/09\/sweet-potatoes-360x361.jpg 360w, https:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2014\/09\/sweet-potatoes.jpg 1200w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<p><strong>Sweet Potatoes in My Home Garden<\/strong><\/p>\n\n\n\n<p>I can personally vouch for the abundant crop in Virginia. The first year that I grew sweet potatoes, I didn\u2019t realize that the vines do tend to wilt after planting the slips, or starter plants. I panicked and planted double the amount I needed. The result was a whopping 63 pounds of sweet potatoes from about 20 plants.<\/p>\n\n\n\n<p>This year is my fifth year growing sweet potatoes, and I did not panic. I planned my garden carefully. I purchased a package of 8 starter slips of \u201cBeauregard,\u201d a good variety for my zone 6b garden, and planted just 8 plants in early May.\u00a0 This weekend, I harvested the sweet potatoes, set them in the garage to cure, and canned 6 quarters for the winter. \u00a0 Canning sweet potatoes is also my blog topic for the Celebrate the Flavor of Fall blogger event.<\/p>\n\n\n\n<h1 class=\"wp-block-heading\" id=\"h-how-to-harvest-sweet-potatoes\">How to Harvest Sweet Potatoes<\/h1>\n\n\n\n<p>Unlike other varieties of potatoes, sweet potatoes do not die back when they\u2019re ready to be harvested. Instead, they give you very subtle clues that the delicious sweet potatoes are ready to be harvest<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-signs-that-sweet-potatoes-are-ready-for-harvest\">Signs That Sweet Potatoes Are Ready for Harvest<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Timing<\/strong>: When you purchase sweet potato slips or starter plants, the package information usually tells you how many days until harvest. That\u2019s a rough estimate but it\u2019s usually accurate. You can also look up the variety online to estimate the harvest date. \u00a0I planted \u201cBeauregard\u201d, which matures in approximately 90 days. I planted the slips around Mother\u2019s Day; June, July and August give me at least 90 days, with a few weeks on either side in May and September for a margin of error. It\u2019s a good guess that they\u2019ll be ready this week.<\/li>\n\n\n\n<li><strong>Yellowing leaves:<\/strong> While leaves won\u2019t die back entirely, you\u2019ll start to notice yellow leaves here and there among the vines. This is a sign that there are mature tubers ready for harvest.<\/li>\n\n\n\n<li><strong>Sweet potatoes actually poking out of the ground<\/strong>:\u00a0 In my garden, the raised beds provide a very lightweight soil. The sweet potato tubers actually begin poking out of the ground in late August. By mid to late September, I can feel with my fingers the size of the tubers.\u00a0 When they get this big, I know they\u2019re ready to harvest.<\/li>\n<\/ul>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter\"><a href=\"http:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2014\/09\/sweet-potato-with-arrows.jpg\"><img loading=\"lazy\" decoding=\"async\" width=\"600\" height=\"400\" src=\"http:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2014\/09\/sweet-potato-with-arrows.jpg\" alt=\"clues sweet potatoes\" class=\"wp-image-2630\" srcset=\"https:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2014\/09\/sweet-potato-with-arrows.jpg 600w, https:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2014\/09\/sweet-potato-with-arrows-150x100.jpg 150w, https:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2014\/09\/sweet-potato-with-arrows-300x200.jpg 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><figcaption class=\"wp-element-caption\">Clues that sweet potatoes are ready to harvest.<\/figcaption><\/figure>\n<\/div>\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-harvest-sweet-potatoes-0\">How to Harvest Sweet Potatoes <\/h2>\n\n\n\n<p>Sweet potatoes can be easily bruised during harvesting, so be careful. Many gardening websites recommend using a spade, and if you\u2019ve planted them in heavy soil, a spade is probably the way to go. I use a trowel and dig them up carefully. I begin digging where I planted the original slips.<\/p>\n\n\n\n<p>Sweet potatoes can produce tubers within about a foot radius of the central plant, and I\u2019ve found small slips starting where vines have rooted, so it\u2019s a good idea to dig carefully out from where you find the first batch of potatoes. Dig them up gently and place them in the sunshine on the soil while you work. Discard the vines and pull them up as you work.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter\"><a href=\"http:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2010\/10\/sweetpotatoes2.jpg\"><img loading=\"lazy\" decoding=\"async\" width=\"580\" height=\"387\" src=\"http:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2010\/10\/sweetpotatoes2.jpg\" alt=\"sweet potatoes\" class=\"wp-image-2017\" srcset=\"https:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2010\/10\/sweetpotatoes2.jpg 580w, https:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2010\/10\/sweetpotatoes2-150x100.jpg 150w, https:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2010\/10\/sweetpotatoes2-300x200.jpg 300w\" sizes=\"auto, (max-width: 580px) 100vw, 580px\" \/><\/a><figcaption class=\"wp-element-caption\">Harvesting sweet potatoes. I place the <a href=\"https:\/\/homegardenjoy.com\/site\/2018\/11\/recipe-for-sweet-potato-sushi.html\">sweet potatoes<\/a> in one wheelbarrow. In the second wheelbarrow, I pull up and discard the vines. I dump the vines at the edge of the woods, where nature will compost them down into the soil. You can either compost them or discard them.<\/p>\n\n\n\n<p>When I\u2019m finished, I pull the sweet potato filled wheelbarrow into a sunny location. Let them rest in the sunshine on a warm day to dry. Do not rinse off the dirt; just let them dry out.<\/p>\n\n\n\n<p>Step 2 is <a href=\"http:\/\/homegardenjoy.com\/site\/2014\/09\/curing-and-storing-sweet-potatoes.html\">curing your sweet potatoes<\/a> so that you can store them through the winter.
