I don&#8217;t know about you, but I love making Christmas cookies. It&#8217;s really a tradition in my family and each generation has her own special recipes.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><a href=\"http:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2014\/12\/Christmas-cookie-recipe.jpg\"><img decoding=\"async\" src=\"http:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2014\/12\/Christmas-cookie-recipe-300x230.jpg\" alt=\"Christmas cookie recipe\" class=\"wp-image-3117\"\/><\/a><\/figure><\/div>\n\n\n\n<p>My mom made Christmas cookies starting in early December. She&#8217;s place them in tins nestled in wax paper, then hide them in the attic to keep them chilled and fresh. We had a walk-in attic in the house I grew up in, and my sister and I would always find the stash of Christmas cookies. It became a game to see how many we could snitch before Mom found out!<\/p>\n\n\n\n<p>My mom made these recipes each year:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Brown Sugar Chews<\/li><li>Apricot and Raspberry Thumbprint Cookies<\/li><li>Sugar Plums<\/li><li>Coconut Macaroons<\/li><\/ul>\n\n\n\n<p>It&#8217;s funny, but walnuts must have been inexpensive back then, because the Brown Sugar Chews, Thumbprints AND Sugar Plums all call for walnuts. We didn&#8217;t have a lot of money so I&#8217;m guessing that walnuts were cheap back then!<\/p>\n\n\n\n<p>Today, my own repertoire of Christmas cookies is a little different. I make:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Fudge Ecstasy Cookies (recipe to follow)<\/li><li><a href=\"http:\/\/www.restlesschipotle.com\/2010\/12\/peanut-butter-rollo-cookies\/\" target=\"_blank\" rel=\"noopener\">Marye Audet&#8217;s Rollo Cookie Recipe <\/a>&#8211; Marye is a good friend of mine and blogs over at Restless Chipotle. Her recipe is to DIE for if you love caramel.<\/li><li>Peppermint sugar cookie candy canes<\/li><li>Almond crescents<\/li><li>Chocolate chip cookies<\/li><li>Peanut butter cookies<\/li><\/ul>\n\n\n\n<p>But be warned: you&#8217;ll probably have to make double the batch. These are the first to be consumed in my house.<\/p>\n\n\n\n<!--more-->\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><a href=\"http:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2014\/12\/Out-of-the-oven.jpg\"><img loading=\"lazy\" decoding=\"async\" width=\"300\" height=\"211\" src=\"http:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2014\/12\/Out-of-the-oven-300x211.jpg\" alt=\"cookies out of the oven\" class=\"wp-image-3116\" srcset=\"https:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2014\/12\/Out-of-the-oven-300x211.jpg 300w, https:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2014\/12\/Out-of-the-oven-150x106.jpg 150w, https:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2014\/12\/Out-of-the-oven.jpg 580w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/figure><\/div>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-ingredients\"><b>Ingredients<\/b><\/h3>\n\n\n\n<p><b>You will need&#8230;<\/b><\/p>\n\n\n\n<p>2 squares of unsweetened baker&#8217;s chocolate<br>1 bag of semi-sweet chocolate morsels, divided into two cup servings<br>2 tablespoons of butter (do NOT substitute margarine)<br>1\/4 cup of flour<br>1\/4 teaspoon baking powder<br>2 eggs<br>2\/3 cup sugar<br>1 teaspoon vanilla extract<br>pinch of salt<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-instructions\">Instructions<\/h3>\n\n\n\n<p><b>To make&#8230;<\/b><\/p>\n\n\n\n<p>Preheat the oven to 350 degrees and grease cookie sheets with shortening.<\/p>\n\n\n\n<p>Using a heavy saucepan, melt the squares of unsweetened chocolate. Use the squares, not the rectangles. (4 rectangles = 2 squares on this brand of chocolate).<\/p>\n\n\n\n<p>Melt together the baker&#8217;s chocolate, 1 cup of the chocolate morsels, and 2 tablespoons of butter. Stir constantly, or else the chocolate will scorch. Keep the heat low. &nbsp;Once everything is melted, remove from the heat and let it cool about one minute. Then scrape it into the mixing bowl.<\/p>\n\n\n\n<figure class=\"wp-block-table\"><table><tbody><tr><td><a style=\"margin-left: auto; margin-right: auto;\" href=\"http:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2013\/12\/melt-it-down.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2013\/12\/melt-it-down-300x200.jpg\" alt=\"\" width=\"400\" height=\"266\" border=\"0\"><\/a><\/td><\/tr><tr><td>Melt the two types of chocolate and butter over low heat.<\/td><\/tr><\/tbody><\/table><\/figure>\n\n\n\n<figure class=\"wp-block-table\"><table><tbody><tr><td><a style=\"margin-left: auto; margin-right: auto;\" href=\"http:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2013\/12\/base-mixture.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2013\/12\/base-mixture-300x200.jpg\" alt=\"\" width=\"400\" height=\"266\" border=\"0\"><\/a><\/td><\/tr><tr><td>Ready to be added to the mixing bowl.<\/td><\/tr><\/tbody><\/table><\/figure>\n\n\n\n<p>Beat mixture on low speed, adding the eggs, vanilla and sugar. &nbsp;Now move the speed to medium and gradually add flour, baking powder and salt until it is well mixed. Turn off the mixer and remove the beaters. Stir in by hand the remaining cup of chocolate chips.<\/p>\n\n\n\n<p>Drop the batter by rounded teaspoonfuls onto the cookie sheets, leaving plenty of room between the cookies. They spread out, so watch your spacing. Bake for 8 to 10 minutes and remove promptly. They will look crackled when done.
