I admit that when I canned all those quarts of <a title=\"Yes, You Can! How to Can Sweet Potatoes\" href=\"http:\/\/homegardenjoy.com\/site\/2014\/09\/canning-sweet-potatoes-how-to-can-sweet-potatoes.html\">sweet potatoes<\/a> last fall, I wondered what I would do with them all. I had one recipe for <a title=\"Fresh Food Wednesday: Sweet Potato Pie Recipe\" href=\"http:\/\/homegardenjoy.com\/site\/2014\/09\/fresh-food-wednesday-sweet-potato-pie-recipe.html\">sweet potato pie<\/a>, and another for pureed <a title=\"Sweet Potato Soup Recipe\" href=\"http:\/\/homegardenjoy.com\/site\/2014\/10\/sweet-potato-soup-recipe.html\">sweet potato carrot<\/a> soup that&#8217;s yummy, but there&#8217;s only so many pies you can make in a year.<\/p>\n<p>I was craving a nourishing, homemade soup today. It&#8217;s really cold outside and my stomach has been on the fritz for a few days, so \u00a0soup just seemed right. I find canned soups too salty lately, although they&#8217;re convenient. Why not use up some of the canned sweet potatoes for the convenience of canned soup without the salt?<\/p>\n<p>Our came a quart Ball jar of sweet potato chunks, 2 cans of organic low sodium vegetable broth, some veggies and voila; within half an hour, instant soup!<\/p>\n<p>It was delicious, flavorful and filling. Exactly what this cold wintry day called for.<\/p>\n<p>Please enjoy my recipe for this Easy Homemade Soup using canned sweet potatoes.<\/p>\n<p><a href=\"http:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2015\/02\/sweet-potato-soup.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-3444\" src=\"http:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2015\/02\/sweet-potato-soup.jpg\" alt=\"sweet potato soup\" width=\"700\" height=\"467\" srcset=\"https:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2015\/02\/sweet-potato-soup.jpg 750w, https:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2015\/02\/sweet-potato-soup-150x100.jpg 150w, https:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2015\/02\/sweet-potato-soup-600x400.jpg 600w, https:\/\/homegardenjoy.com\/site\/wp-content\/uploads\/2015\/02\/sweet-potato-soup-300x200.jpg 300w\" sizes=\"auto, (max-width: 700px) 100vw, 700px\" \/><\/a><\/p>\n<h1>Ingredients for the Easy Homemade Soup Recipe<\/h1>\n<ul>\n<li>1 quart of canned sweet potatoes OR peel, dice and cook several large sweet potatoes to make a quart of cooked chunks<\/li>\n<li>2 cans of organic vegetable broth (approximately 4 cups)<\/li>\n<li>2 large carrots, peeled and diced<\/li>\n<li>2 large stalks of celery, cleaned and diced<\/li>\n<li>2 large slices of onion, diced<\/li>\n<li>1 clove of garlic, minced<\/li>\n<\/ul>\n<p>Drain the sweet potatoes of the canning liquid. Place in a large pot with a lid. Add broth and minced garlic. Simmer.<\/p>\n<p>Microwave on high the carrots, celery and onion for 5 minutes with some water, then scoop everything, water an all into the pot. If you don&#8217;t to use the microwave, place the vegetables in the pot and simmer until tender.<\/p>\n<p>Serve when the veggies are cooked.
