{"id":5243,"date":"2016-05-18T16:17:50","date_gmt":"2016-05-18T20:17:50","guid":{"rendered":"http:\/\/homegardenjoy.com\/site\/?p=5243"},"modified":"2025-06-07T08:33:40","modified_gmt":"2025-06-07T12:33:40","slug":"growing-sage-salvia-officinalis","status":"publish","type":"post","link":"https:\/\/homegardenjoy.com\/site\/2016\/05\/growing-sage-salvia-officinalis.html","title":{"rendered":"Growing Sage, or Salvia Officinalis"},"content":{"rendered":"\n<p>I can&#8217;t imagine not growing sage in my herb garden every year. &nbsp;Sage (<em>Salvia officinalis<\/em>) is one of my favorite culinary herbs.<\/p>\n\n\n\n<p>Sage flavors stuffing for chicken or turkey, and it can even be added to <a href=\"https:\/\/homegardenjoy.com\/site\/2020\/09\/butternut-squash-risotto-with-sage-and-caramelized-onions.html\">risotto<\/a> to enhance the flavor. The aroma acts as a natural air freshener. Perhaps best of all, it&#8217;s a lovely plant with tall purple flowers, so it can be grown as both an ornamental and a culinary herb. <\/p>\n\n\n\n<p>What more can you want from a plant?<\/p>\n\n\n\n<p>Growing sage isn&#8217;t difficult. In my Zone 6B (Virginia Piedmont Region) garden, sage acts as a perennial and returns each year, regrowing from its roots. It&#8217;s a beautiful plant in the garden. The long, oval, green-gray leaves feel soft and velvety to the touch. When it blooms, it sends up tall spikes of purple flowers that the bees love. It makes a great ornamental plant.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Growing Sage in the Backyard Garden &#8211; It&#8217;s Easy!<\/h2>\n\n\n\n<p>What about soil? Fertilizer? Compost? Bugs?<\/p>\n\n\n\n<p>No worries. Sage doesn&#8217;t care.<\/p>\n\n\n\n<p>Growing sage in the backyard garden is easy. It grows in dry, poor soils, and as far as I can tell,&nbsp;&nbsp;resists nearly every pest, disease or problem that my garden can throw at it.<\/p>\n\n\n\n<p>I have transplanted sage in my garden several times, and each time, it looks like it&#8217;s going to die but it doesn&#8217;t. It&#8217;s like a Lazarus plant &#8211; it comes back from the dead.<\/p>\n\n\n\n<p>Now you know why I love it so much.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>How to Grow Sage<\/strong><\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">Where Can You Grow Sage?<\/h4>\n\n\n\n<p>Sage does well from garden zones 3 through 11 in the United States. It can also be grown indoors in a windowsill garden.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Starting Sage<\/h4>\n\n\n\n<p>Sage grows best from plants or layered cuttings although you can <a href=\"http:\/\/homegardenjoy.com\/site\/free-gardening-info\/starting-seeds-indoors\">start it indoors from seeds<\/a> about 10 to 12 weeks before the first frost date for your region.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Light Requirements<\/h4>\n\n\n\n<p>Sage needs full sun but can grow in partial shade, too. If growing sage indoors, place the pot near a bright, sunny windowsill.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Water Requirements<\/h4>\n\n\n\n<p>Sage is drought-tolerant once it is established. New transplants should be kept well-watered until the plant develops a strong root system. After that, sage planted in the outdoor garden should simply be watered during periods of extreme heat or drought.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Ongoing Care and Maintenance<\/h4>\n\n\n\n<p>Pinch or prune the tips of the sage plant each spring before it begins leafing out again to encourage a branching, bush form. Otherwise, sage grows straight up and sometimes flops over. It propagates by layering, like a forsythia, so branches on the ground may put down roots and grow new plants.<\/p>\n\n\n\n<p>I have several <em>Salvia officinalis<\/em>, or common culinary sage, growing throughout my garden. The picture above shows it in the perennial garden. I plant mine as a border plant and include it in the <a href=\"http:\/\/homegardenjoy.com\/site\/butterfly-gardening\">butterfly and hummingbird garden.<\/a> Because it is so drought tolerant, I don&#8217;t worry about growing sage in the hot sun. One delicious recipe to try is my <a href=\"https:\/\/homegardenjoy.com\/site\/recipe\/italian-herb-vinegar-recipe\">Italian herb vinegar recipe<\/a> that includes fresh sage. I have also made pineapple-sage jelly, an <a href=\"https:\/\/homegardenjoy.com\/site\/recipe\/basic-herbal-jelly-recipe\">herbal jelly<\/a> that tastes wonderful on crackers.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Drying Sage<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">Dehydrator Method of Drying Sage<\/h4>\n\n\n\n<p>The leaves should be picked in the morning when the oils are at their strongest. Pick the leaves off of the stem and place on a dehydrator rack. Dehydrate for one hour or until the leaves crumble. Crumble the leaves and place into glass spice jars. Label and store.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Solar Method of Drying Sage<\/h4>\n\n\n\n<p>You can use any general method of <a href=\"https:\/\/homegardenjoy.com\/site\/2014\/06\/savor-the-taste-of-summer-how-to-dry-fresh-herbs-without-special-equipment.html\">drying herbs<\/a> without a dehydrator to dry garden sage for later use. Snip the stems and hang them upside down to dry in the sun. A paper bag may be placed over the herbs to keep them free of dust, insects, and dirt.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Car Dehydrator<\/h4>\n\n\n\n<p>Another method I learned at a lecture given by the Piedmont Herbal Society is what they dubbed the &#8220;car method.&#8221; Put the sage inside a paper bag and place the closed bag on the dashboard of your car.
