As I write this, my slow cooker is gently simmering dinner, and I am grateful that on a busy work day the pot roast will be tender and juice by the time I finish working, shut off my computer, walk the dog and feed the cats. My slow cooker is my lifesaver on a busy day. Not only does it make food preparation so much easier, meat comes out tender and moist in the slow cooker.
The blogger over at Totally the Bomb put together a wonderful list of 50 – count ’em, fifty! – slow cooker recipes containing three ingredients or less. I’ve added my own two, below. One of them is in the slow cooker right now, waiting for me to finish preparing the meal in less than 15 minutes as I cook egg noodles, reheat some leftover brown gravy, and heat up a can of pickled beets canned from garden this summer. My Slow Cooker Pot Roast Recipe
Simply put chuck roast or similar cut of beef roast into your slow cooker. Add 1 cup of water, 1 bouillon cube and cook on LOW for 8 or 9 hours.
Rotisserie Style Chicken
Place chicken breasts or bone-in pieces in the slow cooker. Cover the pieces of chicken with lemon-pepper seasoning. Add low sodium chicken broth until chicken is half-covered, about 1 cup. Cook on LOW for 8 to 9 hours.
Very yummy. I use my slow cooker on days when we have a big project to work on at home. It’s nice to have supper made when we’re too tired to cook.
