Radish Cucumber Salad

A cool, peppery salad with plenty of zing to it thanks to the radishes and dressing. You can use store-bought radishes but fresh garden radishes make this radish recipe outstanding.

Servings: 2 large plates of salad

Ingredients
  

  • 1 large cucumber, peeled and sliced thin
  • 4 cups baby arugula, washed
  • 3 large fresh radishes, washed, trimmed, and sliced thinly

Method
 

  1. Place washed baby arugula leaves on a plate.
  2. Arrange thinly sliced cucumbers around the rim as shown.
  3. Place radish slices in the middle. You can pile them up to make a flower out of salad, with the radishes like the center and the cucumber like petals, or just scatter in the middle.
  4. Dress with tangy tarragon-dijon vinagrette and enjoy.
