Light and Fluffy Peanut Butter Bread

A light, fluffy, quick bread with a hint of peanut butter. A perfect after-school snack or breakfast bread.

Ingredients
  

  • 2 cups white flour
  • 1/3 cup Sugar
  • 2 teaspoons bakingi powder
  • 1/4 teaspoon Salt
  • 1 large egg
  • 1 cup 1% milk
  • 3/4 cup peanut butter

Method
 

  1. Preheat the oven to 350 degrees F. Grease a large loaf pan.
  2. In a mixing bowl, mix flour, sugar, baking powder and salt.
  3. While the mixer is running, add the milk, then the egg.
  4. Mix in the peanut butter.
  5. Pour batter into greased loaf pan. Bake for 50-55 minutes at 350 until a toothpick inserted into the center comes out clean.
  6. Cool 5 minutes, use a knife to loosen the bread. Turn over and allow to cool completely on a wire rack.

Notes

This quick bread freezes well. Cut the slices before freezing them so you can easily grab a slice, pop it into the microwave for 30 seconds to reheat it, and enjoy breakfast on the go.
